It’s American Heart Month and today we have a heart healthy recipe of Mongolian beef cooked by Project Angel Food Executive Chef John Gordon. Ingredients

1 pound of lean ground beef, 10% fat

4 teaspoons of sesame oil, salad or cooking

2 garlic cloves

4 teaspoons of fresh ginger root

4 teaspoons of rice vinegar, original seasoned, 40 grain

6 tablespoons of brown sugar, unpacked

3 tablespoons of soy sauce, low sodium

2 1/2 teaspoons dried, whole sesame seeds

1 teaspoon red, crushed chili pepper flakes

6 tablespoons chopped green onion

Instructions

  1. Brown the lean beef at 325-350 degrees and add in the sesame oil halfway
  2. Mince the garlic and ginger
  3. Drain the fat from the beef and add in the garlic and ginger
  4. Return to low heat and add in the rice vinegar, brown sugar, soy sauce, sesame seeds and red pepper flakes. Cook until the liquid has reabsorbed and the meat is shiny but not soupy
  5. Garnish with the green onions and serve
